Diabetic Carrot Cake Recipe
This is one diabetic cake recipe that is great because it can be turned into muffins. Simply pour the batter into a muffin tray.
Ingredients:
2 cups of whole wheat flour
½ cup Margarine, melted
1 tsp Cinnamon
½ tsp ground cloves
1/3 Tbsp bicarbonate of soda
¼ cup sunflower seeds
¼ cup coconut
½ tsp ginger
1 cup walnuts, chopped
2 cups of dessert apples, peeled cored grated
3 cups carrots, grated
3 large eggs
4 tbsp fresh orange juice
Preparation:
- Set the oven 180 degrees
- Sift dry ingredients
- Beat eggs and gradually add the melted margarine and orange juice.
- Add the wet ingredients to the dry.
- Add the carrots, apple, walnuts, sunflower seeds and coconut.
- Bake for 35 minutes or until done.
Diabetic Chocolate Cake Recipe
This recipe continues to be adapted so that the taste of chocolate could be enjoyed once in a while by diabetics with no crazy irregularities from happening within their body.
Each serving of the recipe contains just 35g of carbohydrates, which is what every diabetic needs to watch for.
Ingredients
3 Tbsp reduced calorie margarine
1/4 cup sugar-free cocoa powder
500 g unsweetened chocolate
1 1/4 cups cake flour
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla extract
2 Tbsp canola oil
1 cup cold water
1/4 teaspoon salt
12 packets or 4 teaspoons bulk Sweet’n Low granulated sugar substitute
Method
- Preheat oven to 180 degrees C or 350 F
- Spray pan with non-stick cooking spray
- Chop the chocolate up and melt margarine with the chocolate over a gentle heat
- Sift the flour, cocoa, baking soda and salt together
- Make a well in the middle of the dry ingredients and blend in the wet ingredients
- Place the mixture into a round springform pan
- Bake for 40 minutes or until a wooden toothpick inserted in center comes out clean.
- Cool for 10 minutes and then remove cake from pan and cool completely on rack.
Diabetic Pound Cake Recipe
I had to include a pound cake recipe to do the job and this one couldn’t be easier. It contains some flavor too. You could swap the raisins for a couple of nuts if that is your preference, but this is the basic recipe and from here you could just use your imagination.
2 cups flour
11/2 tsp baking soda
1/2 cups canola oil
2 large eggs
3 overripe bananas
½ cup desiccated coconut
1 1/2 Tbsp. Sweetener or low calorie sugar of your choice
4 Tbsp. buttermilk
1 cup raisins
1 tsp vanilla extract
1 1/2 cups pecans
- Set the oven 180 degrees or 350 degrees
- Sift flour and baking soda. Add the oil and mix in
- Add the eggs and keep on mixing
- Add the sugar and coconut , pecans and raisins
- Mash up the bananas, liquid sweetener. Mix well until light. Beat in eggs.
- Bake for 25 to 30 minutes or until golden brown
